Caledonian Edinburgh reopens Caley Bar as new listening venue

The Caledonian Edinburgh has reopened its Caley Bar as a new listening venue following a refurbishment. 

Located on Princes Street, the bar will open to the public on 1 November, and its redevelopment forms part of ongoing investment in the hotel by owner Henderson Park and operator Klarent Hospitality.

The redesign, by Cunningham McLean, includes the installation of vinyl turntables and new seating areas. The bar will serve a new cocktail menu developed by the hotel’s team, using local ingredients, alongside a selection of small dishes.

The new venue was created drawing inspiration from Japan’s jazz kissa tradition – small bars dedicated to attentive music listening.

The new cocktail menu has been developed by the hotel’s bar team and features drinks such as Birch, made with birch sap vodka, vintage apple eau de vie, birch caramel and green tea-infused vermouth, presented in a ceramic tumbler crafted by a local maker. 

The drinks will be accompanied by a menu of small savoury and sweet dishes.

The Caley Bar relaunch follows a series of wider refurbishments at The Caledonian Edinburgh, part of the Curio Collection by Hilton, as the hotel continues to update its historic interiors while maintaining its reputation as one of Scotland’s best-known hospitality venues.

Matthew Swan, food and beverage operations manager at The Caledonian Edinburgh, said: “The Caley Bar is all about atmosphere. From the warmth of the lighting to the sound of vinyl spinning through the room, it’s a space where people can slow down, connect and really enjoy the moment. The music, the cocktails, the setting – everything has been designed to feel effortless and inviting.”
