The Elysium Collection, a new group of British hotels, spas and health clubs, is set to launch its first properties across Cornwall, Surrey and the Lake District from winter 2026,

The 56-bedroom Elysium St Mawes in Cornwall will be the group’s debut property, due to welcome guests this winter following the redevelopment of the historic Ship and Castle Hotel. The project is being delivered in collaboration with architecture and design studio 3DReid, which has also worked on Gleneagles.

The new collection has been created around a concept of informal luxury, combining restored heritage buildings with wellness and destination-led hospitality. Rather than adopting a standardised design across its properties, Elysium plans to shape each hotel around its individual setting, using natural materials, British makers and locally inspired finishes.

This approach will also extend to the guest experience, including locally tailored guides, seasonal touches and services such as muddy boots being cleaned overnight, alongside recommendations for walks, swims and other activities.

Stephane Delourme, executive chef, will oversee dining across the collection. Delourme previously spent more than two decades as head chef at Rick Stein’s The Seafood Restaurant before becoming group chef for the wider restaurant group. Menus will focus on seasonal produce sourced from local suppliers, with Elysium St Mawes placing particular emphasis on day-boat fish, shellfish and other coastal ingredients, alongside produce from nearby farms and growers.

The focus on wellbeing will continue throughout the properties, with each hotel set to offer a spa and wellness experience tailored to its location. Elysium St Mawes will launch with TempleSpa as its spa partner, offering treatments designed around relaxation and restoration, while a second spa partner will be appointed for selected future properties.

Many of the hotels within the collection are historic properties undergoing restoration, with the aim of preserving their existing character while introducing contemporary comforts. Following the opening of Elysium St Mawes, further properties are planned across Cornwall, Surrey and the Lake District through winter 2026 and into 2027, with details of each hotel to be announced as it approaches launch.
