Elysium Collection has revealed it will open its first property, a 56-bedroom waterfront hotel in St Mawes, Cornwall, in early 2027.
The transformation of the 1904 building will include six family rooms, a café and a spa equipped with an indoor thermal pool, sauna, steam room, cold plunge and two treatment rooms.
Executive chef Stéphane Delourme, who previously worked for more than 20 years at Rick Stein’s The Seafood Restaurant, will oversee the main dining venue. The hotel will also feature a daytime café that transitions into a wine bar in the evening.
Elysium Collection plans to open subsequent properties in Surrey and the Lake District.
