Fairmont Hotels and Resorts has opened Fairmont Cheshire, The Mere, following a £125m transformation of the historic estate.
Located on a 157-acre site overlooking The Mere Lake near Knutsford, the new countryside resort features 116 bedrooms, including 23 suites, alongside elevated dining, wellness and leisure facilities. The opening marks Fairmont’s fourth UK property, joining The Savoy, A Fairmont Hotel, Fairmont Windsor Park and Fairmont St Andrews.
The redevelopment, led by developer Select Group, has introduced a new Fairmont-branded property to the Cheshire estate, with interiors by Bergman Design House featuring mid-century inspired design elements, including sculptural forms, layered lighting and textured finishes.
The resort’s facilities include an 18-hole championship golf course, Fairmont Spa and a collection of dining venues, including Gordon Ramsay at The Mere, which features a British-inspired menu alongside private dining areas, a lakeside terrace and a speakeasy-style bar.
Other dining venues include The Orangery, which will serve afternoon tea before transitioning into a champagne and oyster bar in the evening and The Club Lounge, offering globally inspired dishes alongside Indian-influenced cuisine.
Additionally, the resort’s wellness facilities are located within a restored Victorian stable block and include a 20-metre swimming pool, thermal suite, sauna, hammam steam rooms, salt inhalation chambers and six treatment rooms. The spa will feature treatments using products from brands including Wildsmith Skin, KAMA Ayurveda and 111SKIN.
The property also includes event and meeting facilities, with a 1,000sq m ballroom capable of hosting up to 1,000 guests, alongside four boardrooms for corporate meetings, private dining and events.
