JA Mar Hall Golf and Spa Resort has appointed three senior managers to oversee its food, beverage and guest services as part of a multi-million-pound refurbishment.
Brian Scanlan joins the five-star estate near Glasgow as executive chef, while Yasmine Gibb takes up the role of food and beverage services manager. Conrad Cooper completes the hires as executive housekeeper.
Scanlan brings more than 25 years of industry experience to the estate, having previously held senior positions at The Ivy and Cameron House on Loch Lomond. In his new role, he will focus on local sourcing and ingredients grown within the resort’s estate.
Gibb spent seven years at Hilton Glasgow before joining the business, while Cooper was previously employed at Crowne Plaza Glasgow. The appointments coincide with planned menu changes across the venue’s dining spaces, event facilities, and afternoon tea service.
The 74-room hotel, located in a 19th Century estate, was acquired by Dubai-based Dutco Group in 2024.
Scanlan said: “JA Mar Hall’s setting and ambition make this a rare opportunity. My vision is to build a food and beverage experience with a real identity of its own – one that puts Scottish provenance and craft at its heart.”
Gibb added: “Food and beverage is central to how guests experience Mar Hall. My focus is on making it one of the estate’s defining strengths – every setting with a clear purpose, distinct character and world-class service.”
Cooper said: “At a five-star estate like Mar Hall, every detail matters. I’m looking forward to upholding the standards, care and pride that define the resort.”
