Hyde and Seek, London Hyde Park appoints executive head chef

Hyde and Seek, London Hyde Park has announced the appointment of Ranjitkumar Sukumaran as executive head chef, ahead of its official opening this September.

Sukumaran joins the Tribute Portfolio hotel in Bayswater following a £42m transformation of the former Corus Hotel Hyde Park. He brings more than 23 years of culinary experience, having spent the past four years as executive head chef at The Londoner.

He also held senior roles at Corinthia London, Royal Garden Hotel, Jumeirah Carlton Tower and Wentbridge House Hotel.

In his new role, Sukumaran will oversee the culinary direction of the 309-room hotel’s two dining concepts: Seekers Restaurant and Bar, a 138-seat contemporary British venue, and HydeOut, an 88-seat café lounge and co-working space situated in a glass-roofed courtyard.

The menus will feature seasonal British produce, including Cornish crab, Orkney scallops and Aberdeen Angus beef, alongside Middle Eastern and Pan-Asian inspired sharing plates. Located at 1 Lancaster Gate, the property also includes meeting spaces and a gym.

Sukumaran said: “Hyde and Seek captured my imagination from the very beginning, not only because of its remarkable location overlooking Hyde Park, but because of the rare opportunity to help shape a completely new dining destination from day one. My vision is to create food that reflects both the heritage of British cuisine and the vibrant multicultural influences that define Bayswater today.

“For me, opening a brand-new kitchen is the beginning of a journey and I’m incredibly excited to work alongside such a talented team to create a restaurant and café that become part of the fabric of the local community as well as a destination for visitors to London.”

With the property shut, IHM put Paul Davies in charge in June 2026 to oversee the pre-opening phase, launch strategy and subsequent daily operation. Davies arrived from a Marriott cluster role spanning South West England and Wales, so the company installed brand-side operating experience before appointing the kitchen lead. The order fixes responsibility: the executive head chef will shape the food offer, but Davies already owns the wider launch into which it must fit.

That reporting line is only one layer of the arrangement. IHM said in July 2026 that it had signed a management agreement with Vertiq Hospitality Partners, while retaining ownership and Marriott supplied the flag. The chef therefore enters a property with ownership, management and brand divided among three businesses. By the time Vertiq joined, IHM had brought the scheduled reopening forward from late autumn to September 2026.
